whats the proper way to store eggs before you cure them? is it possible to freeze them until you have a bit to do at one time? and whats the best way to remove them from salmon? Im tryin to find something to do with this  small collection of Humpy roe.

I wrap them up in a paper towel like a burrito and store in the fridge for up to 3-4 days.  I cure first, then freeze, then vacuum seal.  When I have tried freezing uncured eggs they seem to get damaged in the freezing/thawing process and you lose some juice.

-you should always bleed your fish anyway, but especially important if you are keeping eggs.  Once they are bled, have your clean plastic baggie ready, straight from fish to baggie.  I don't even bother with eggs that have been sitting in a bloody fish, or eggs covered in sand or gravel.
